Gluten Free Corn Pasta

 

If you are looking for a delicious and light gluten free side dish, then you have to try this Gluten Free Corn Pasta! Bonus, it’s so easy to make and will be the thing that people go back for seconds. It’s simple yet delicious!

Ingredients

  • 1 - 12 Ounce package of Gluten Free pasta

  • 1 Green Bell Pepper (finely diced)

  • 2 Ears of Corn (cooked and cut off cob), or 1 Can of Corn

  • 1/2 Cup of Mayonnaise

  • Salt & Pepper to taste

Instructions

  1. Boil pasta til al dente.

  2. Cook corn. I placed two ears of corn in the microwave for 4 minutes and let it cool. Then cut off the cob and mix into pasta.

  3. Mix in chopped bell pepper and mayonnaise.

  4. Stir until combined and season with salt and pepper.

  5. Let chill in the refrigerator for at least 30 minutes before serving.

Notes

  • You can absolutely use canned corn to save time!

  • You can use regular pasta if you aren't g-free!

  • Leftover pasta makes a great lunch the next day!
