If you are like me, feeding a large family, you certainly don’t want to waste any food! Luckily, on the farm, we have many animals or a compost pile ready for over ripe fruits and vegetables that don’t get eaten fast enough. Today though, the over-ripe bananas on my counter are going to be turned into one of my very favorite treats! Banana Bread! You have to catch them right in between the “too ripe to eat” stage and the “throw these rotten things in the compost” stage!
With fall just around the corner, I decided it was the perfect time to whip up a batch of gluten-free banana bread, a staple in our home that never fails to warm both the heart and the belly!
I reached for my favorite mixing bowl and set to work. It’s funny how simple ingredients can come together to create something so comforting.
As I filled the loaf pan and popped it into the oven, I knew the next hour would be filled with the tantalizing aroma of banana bread wafting through our cozy farmhouse. It’s the kind of smell that draws everyone in, no matter what they’re doing. Sure enough, within minutes, my kids were asking what that delicious smell was.
When the timer finally chimed, the golden loaf emerged like a warm hug. I allowed it to cool about 10 minutes before cutting into it. I couldn’t resist helping myself to a slice, slathered in a generous pat of dairy-free butter. It was simply divine.
As my children gathered around the table, each with a piece of warm Banana Bread, it became another cherished memory made on our farm. Moments like these remind me of the simple joys found in baking and sharing something sweet together. Oh, how I love the delicious chaos of life on the farm!
Banana Bread Ingredients
3-4 Over-ripe Bananas mashed
2 cups Gluten-Free Flour (I use King Arthur's)
1 Large Egg
1 Tablespoon vanilla
1/2 Teaspoon salt
1 Tablespoon cinnamon
3/4 Cup Sugar
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1/2 Cup Butter (I use Plant Based Country Crock, Olive Oil Butter)
Instructions
Preheat Oven to 350 degrees. (Recipe card below convert Fahrenheit to Celsius)
Mix all ingredients until combined.
Pour into Greased 9x5 Loaf Pan.
Bake at 350 degrees for 50 minutes or until a toothpick comes out clean.
Let cool for at least 10 minutes before slicing.
Slice and enjoy!
