Gluten Free Dairy Free No Bake Chocolate Oatmeal Cookies
Gluten Free and Dairy Free, no bake, chocolate oatmeal cookies? Did you ever think you’d hear those words in the same sentence? Have no fear gluten free fam, I grew up eating the “original version” of these cookies with regular oatmeal and milk and missed them so much that I tested them with gluten free oats and dairy free milk and butter. Guess what? IT WORKED! They tasted exactly like I remembered. These cookies are a cult classic in my family and everyone agrees that you can’t tell the difference between the “gluten and dairy’ version and my allergy friendly ones!
Ingredients
3 Cups Gluten Free Oatmeal (Must be One-Minute, Quickcook)
2 Cups Sugar
1/2 Cup of Dairy Free Butter
4 Tablespoons Unsweetened Cocoa Powder
1/2 Cup of Dairy Free Milk
1/2 Cup Creamy Peanut Butter
2 Teaspoons Vanilla
Instructions
In a medium saucepan, combine milk, sugar, butter and cocoa over medium heat.
Bring to a rolling boil, stirring constantly. Boil for exactly 1-minute.
Turn off heat, quickly stir in oats, peanut butter and vanilla.
Drop by spoonful's onto parchment paper and let cool.
Notes
Make sure to use Minute or Quick Cook oats! Do not use steel cut oats or regular oats because they will not "cook" enough.
I have only used creamy peanut butter for these cookies.
Make sure to boil for exactly one minute! No Less, No More!! If you under cook them, they will be soft and not harden. If you overcook them, they will be dry and crumbly.
