Gluten Free Meatloaf
The best meatloaf made with gluten-free sourdough discard and topped with magic meatloaf sauce! This is my family’s favorite meal by far! I have to double the recipe because my boys will devour it and turn any leftovers into delicious meat loaf sandwiches! I started using my gluten free sourdough starter in place of breadcrumbs and never looked back! It gives the meatloaf the best texture and really enhances the flavor! You can also make this recipe using non-gluten free ingredients if your family isn’t gluten free!
Ingredients
2 lbs Gound Beef
2 Eggs
1/2 Cup gluten free sourdough discard (works with gluten free breadcrumbs, too!)
3 Tablespoons Worcestershire sauce
2 Tablespoons Mustard (I use spicy brown mustard)
4 Cloves Garlic minced
1 Small Yellow Onion finely chopped
1/4 cup of Ketchup
1 6 oz. can of Tomato Paste (save 2 tablespoons for Magic Meatloaf Sauce)
Salt & Pepper to taste
1 Teaspoon Onion Powder
1 Teaspoon Paprika
Sauce
1/2 Cup Ketchup
2 Tablespoons Worcestershire sauce
1 Tablespoon Mustard (I use spicy brown mustard)
2 Tablespoons Tomato Paste
1/4 cup brown sugar
Instructions
Preheat Oven to 400 degrees
Line a 9x5 pan with parchment paper.
Combine all meatloaf ingredients together and press into loaf pan.
Put in oven and cook for 40 minutes.
Mix sauce while the meatloaf is cooking.
Remove meatloaf after 40 minutes and pour sauce on top.
Bake for another 15-20 minutes until internal temp reaches 160 degrees.
Notes
I like to garnish with green onions and serve with rice or mashed potatoes! I also sprinkle crushed red pepper on my serving for a sweet, spicy twist!
